Reinterpreting Haldiram’s legacy through a contemporary dining and retail expression, shaped by flow, discovery, and urban presence.
Defining a contemporary expression for the legacy Indian brand, the Haldiram’s restaurant by groupDCA transforms a large-format food retail into an immersive spatial experience. Conceived as a prominent annexe to an existing commercial complex, the project demanded a strong visual identity that could assert its presence while remaining sensitive to its urban context. The design responds with an expressive yet composed façade, drawing from Haldiram’s familiar colour palette and brand cues to create an inviting, transparent storefront.
The spatial narrative of the interiors unfolds with clarity and anticipation, similar to that of an airport retail arcade. Inspired by the seamless flow and layered discovery typical of transit environments, the interiors are planned without physical barriers, allowing movement to feel intuitive and continuous. This open-ended planning introduces an element of suspense, encouraging exploration and subtly enhancing engagement across the store. The layout is organised into three primary zones—retail, dining, and serving—each crafted to evoke a distinct experience, yet connected through transitional spaces that heighten the sense of journey between them.
Retail racks are strategically patterned to promote free movement, allowing customers to browse fluidly from one section to another. Visual obstructions are deliberately minimised, and the ceiling design complements the rhythm of the racks below, amplifying spatial openness and visual continuity. These gestures, rooted in customer psychology, ensure that the retail experience remains engaging without feeling congested or overwhelming.

The dining area unfolds as a series of articulated seating, each responding to different patterns of use. The dining spaces are layered into semi-private and private pockets, allowing guests to choose between social interaction and quiet indulgence. From interactive counter seating and standing zones for quick visits, to inverted seating arrangements within larger halls that offer a sense of personal territory, the design accommodates varied dining behaviours with ease. Ceiling levels play with voids and volumes, punctured to reveal industrial lighting fixtures that become visual features. At the far end, private dining zones are subtly separated with glass partitions, offering a more intimate setting while maintaining visual connection to the larger space. Positioned between the retail area and the main dining hall, the ice-cream and dessert section acts as a visual and experiential threshold.
Throughout the store, contemporary furnishings, carefully calibrated lighting, and integrated planters introduce moments of pause. Vivid colours and dynamic forms lend each zone a distinct identity, sustaining a sense of excitement and discovery. By night, the façade comes alive—glowing from within and standing out against its context, evoking the controlled mystery of an aircraft cockpit, where the interior experience takes precedence over what is revealed outside. Together, these elements create a layered, engaging retail and dining environment that elevates the often mundane act of dining into a fun, thoughtfully choreographed experience.
